Your new favourite snack: Smoky Sesame Edamame

Grilled Smoky Sesame Edamame MAYA VISNYEI

Consider yourself warned: these are addictive! Don’t worry, though. There’s virtually no prep for these Smoky Sesame Edamame, they cook in minutes, and they’re big on flavour and packed with protein and healthy fibre. They can be served as a side dish or as a pre-dinner snack with drinks. Serves 4-6 as a side or a snack.

Smoky Sesame Edamame

500 g frozen edamame in shell, thawed, patted dry
2 tsp sesame or vegetable oil
1 lime, halved
2 tsp sesame seeds
1 tsp kosher or flaky salt

1. Preheat grill to medium-high heat (400°F).

2. In a bowl, toss edamame pods in oil until coated. Transfer to a grilling basket (or into a heated cast iron frying pan or on a sheet of heavy-duty aluminum foil), and place on grill with lime halves, cut side down. 

3. Grill both until charred in places, roughly 6-8 minutes, flipping edamame pods once. 

4. Remove from grill, and dress with a squeeze of juice from the caramelized lime halves, sesame seeds, and salt.
