You can buy pre-made Latin American-style fresh chorizo, but these flavourful homemade patties—infused with garlic, smoked paprika, and red wine—are easy to make and delicious as part of a mixed grill. They also make a terrific burger patty.
In a food processor, whirl together pancetta, wine, garlic, smoked paprika, hot paprika, oregano, salt, thyme, and cloves until pancetta is finely chopped. Transfer to a large bowl; let stand for 15 minutes.
Using clean hands, knead in pork until combined. Shape into 16 patties, 3/8" thick; transfer to a waxed paper-lined plate or tray (stacking and separating with additional waxed paper as needed). Cover with plastic wrap and refrigerate for at least 2 hours. (You can make patties ahead to this step.)
Meanwhile, pre-heat grill to medium-high. Grill patties until no longer pink inside and thermometer inserted into centre reads 160°F, 3 to 4 minutes per side.

TIP: You can chop the pancetta finely by hand and mix the ingredients together in a bowl if you don’t have a food processor at the cottage.
