Nutty crunch banana bread recipe

A breakfast of bran cereal and sliced bananas is the inspiration for this healthy, delicious banana bread. It tastes great warm out of the oven or toasted and spread with honey butter.

Here’s how to quickly ripen bananas for banana bread and other baking recipes.


1 egg, beaten

¼ cup margarine, melted

1 cup bananas (2-3), mashed

½ cup granulated sugar

1 tsp vanilla

1 cup multigrain flour

⅔ cup rolled oats

⅓ cup all bran cereal

½ cup walnuts, chopped

1 tsp baking powder

1 tsp baking soda 


1) Beat egg, margarine, bananas, sugar, and vanilla in large bowl.

2) In a separate bowl, combine remaining ingredients. Add to banana mixture, stirring just to moisten. Spread in a greased 8 ½” X 4 ½” loaf pan.

3) Bake in preheated 375°F oven for 30-40 minutes. Makes 1 loaf.
