Make your own mayo with these two super easy, totally delicious recipes

Insanely easy mayo: Two minutes, 5 (or 6) ingredients, and it’s done.

Classic

1 egg
1 tbsp fresh lemon juice
1⁄2 tsp Dijon mustard
1⁄2 tsp salt
1 cup vegetable oil

Vegan mayo

3 tbsp chickpea liquid (from a can of chickpeas)
1 tbsp fresh lemon juice
2 tsp Dijon mustard
12 chickpeas
1⁄2 tsp salt
3⁄4 cup vegetable oil

For each recipe above, place all the ingredients except the oil in a blender, and blend for just a few moments, until the mixture is smooth. With the blender running, gradually drizzle the oil in a thin stream through the small opening in the lid. Blend until the mix- ture thickens and becomes like, well, mayonnaise. You can add up to 2 tbsp more oil if the mayo isn’t thick enough. makes 1-1⁄2 cups Classic Mayo or 1 cup Vegan Mayo.

Tip: You can use a mixture of vegetable oil and olive oil.
