The first sap

It’s an early hint that the dreary days of winter are coming to an end—the first tapping of maple trees for maple syrup. Sap starts to flow mid-February, and while we might not enjoy this year’s syrup crop for another few months, there’s always time to celebrate Canada’s natural sweetener with some pancakes, a beaver tail, or one of the many uses for maple syrup below.
