Blueberry Cheese Pie

Ingredients

Crust

  • 1 3/4 cups (425 ml) graham cracker crumbs
  • 1/3 cup + 2 tbsp (75 ml + 30 ml) soft unsalted butter

Fruit topping

  • 2 tbsp (30 ml) sugar
  • 1 tbsp (15 ml) cornstarch
  • 1 tbsp (15 ml) fresh lemon juice
  • 2 cups (500 ml) blueberries, fresh or frozen

Filling

  • 2 cups (500 ml) blueberries, fresh or frozen
  • 1 lb (500 g) cream cheese, softened and at room temperature
  • 1/4 tsp (1 ml) salt
  • 2/3 cup (150 ml) sugar
  • 2 large eggs
  • 1 egg yolk
  • 1 tsp (5 ml) fresh lemon juice
  • 1 cup (250 ml) sour cream
  • 1 tsp (5 ml) vanilla
