Quick and easy dock snacks
Need something easy to make and bring out to the dock for a large group of people? Try these quick and fun solutions:
Gingered melon and prosciutto
Cut a canteloupe or honeydew melon into bite-sized pieces. Toss with juice of half a lime and 1 tsp (5 ml) grated fresh ginger. Wrap in prosciutto and secure with a skewer. Drizzle with olive oil and season with freshly ground black pepper.
Greek Salad Skewers
Combine cucumber, feta, and half of a kalamata olive on a short bamboo skewer. Dress with olive oil mixed with finely chopped fresh oregano, sea salt, and freshly ground black pepper.
Thread a mini bocconcini, wrapped in a basil leaf, and a cherry or grape tomato on a skewer. Drizzle with good balsamic vinegar.
Watermelon and Feta
Spear a cube of feta and a cube of watermelon on a skewer. Drizzle with balsamic vinegar.
