Rabbit and pappardelle
Jeremy Charles, chef at Raymond's in St. John's (chosen by enRoute as the best new restaurant in 2011) served wild Newfoundland rabbit with pappardelle and wild mushrooms. There's some of Michael Stadtlander's speck in the mix too. Fantastic.
