Every year the Thanksgiving turkey dominates the conversation. It demands to be noticed, what with its oversized roasting pan and long cooking time. What the cottage cook can have fun with instead are the side dishes, the accompaniments that may not get the respect they deserve. Here are make-ahead recipes that take favourite autumn-harvest vegetables and give them a twist, not so much that the sides feel uncomfortable at the Thanksgiving table, but enough of an update to steal some of that egocentric bird’s thunder.
