How to peel a hardboiled egg
Another egg tip, this time on getting a hardboiled egg to come out of its shell. From Tim Ferris, author of The Four-Hour Work Week:

- After boiling eggs, chill immediately in ice water with 1 tsp (15 ml) baking soda.
- Tap the small end and remove a small piece of shell; repeat on the other end.
- Blow with gusto into the small end.

Yes, peeling eggs in quantity is a pain. But perhaps this isn't the most hygienic method, if you're serving the eggs to guests. It's probably better for your own eggs. BTW, there's a great devilled eggs recipe on epicurious that adds chopped green olives (with pimento) to the yolk mixture. Somehow the olives add a real lift.
