Easy Tomato Salads



  1. Heirloom Tomato Salad
  2. Slice tomatoes and arrange on a large platter. Sprinkle with a little sugar if desired, salt, freshly ground pepper, chopped green or red onion, and chopped fresh thyme. Drizzle roughly equal amounts of balsamic vinegar and olive oil on top. Let stand for up to 2 hours before serving. You’ll appreciate some crusty bread, served on the side, to soak up the juices. Try other fresh herbs in place of thyme, such as basil, oregano, tarragon, savory, or parsley.
  3. Bacon, Basil, and Tomato Salad
  4. Cut a bunch of cherry tomatoes in half. Add chopped fresh basil and roughly equal amounts of balsamic vinegar and olive oil, plus salt and freshly ground pepper. Fry some diced bacon until crisp and drain on a paper towel. Just before serving, sprinkle the bacon bits on top.
